Baechu Doenjang-gook is a summer staple of Jeju households. Low-fat and rich in nutrients, the soup is believed to extend longevity, thus earning it the nickname “No.1 longevity food.” While cooks in other parts of Korea add tofu, garlic and red peppers to the broth, the old-style Jeju Doenjang-gook is simply cold water, soybean paste and sliced, tender cabbage leaves.
