On Saturday Dec. 10, The Jeju Weekly’s team of junior reporters attended Kim’s Cooking and Baking Academy to learn the art of cooking two traditional Jeju dishes. It was our seventh such English class.

We learned how to make the traditional Jeju dishes of bing tteok (buckwheat rice cake) and bean congee.

The ingredients needed to make these dishes were rice flour, water, leeks, and radishes for the congee; and buckwheat flour, salt, sesame oil, and green onions for the rice cake.

Here are some recipes of Jeju traditional food.


Recipe 1. Bing tteok

To make bing tteok you need a bowl of buckwheat flour (maemil), salt, radish, the stems of two small green onions, a small spoonful of powdered sesame mixed with salt, half a tablespoon of sesame oil, and cooking oil.

First, chop the radish and boil it in salted water. Then scoop out the radish and season with sliced small green onions, salt, powdered sesame seeds, and salt, and cooking oil.

Second, put the salt and water in a bowl of buckwheat flour to make dough and stir it until it becomes smooth. Then add some sesame oil.

Third, pour cooking oil into a pan and wipe with tissue. Wait until the pan is hot and pour the dough to make a circle shape. To prevent from sticking, use a toothpick to separate the dough from the pan.

Fourth, after you make dough, put radish on it and roll it up. The bing tteok is then complete.

However, there are a number of points to remember when cooking bing tteok. Do not bake the dough for too long as the dough may stick to the pan. Also do not put too much spiced radish on the baked dough as this risks tearing the rice cake.


Recipe 2. Bean congee

To make bean congee, you need a bowl of rice, bean powder, seven cups of water, salt, radish, and lettuce.

First, pour water into a bowl of bean powder and stir it. Then winnow the rice to make the rice soft and crush it.

Second, chop the radish, parch the rice with little amount of water in the bowl. Then add bean powder in the bowl. When it boils, add radish. If it is boiled, reduce the intensity of fire to middle and stir it for a long time again then add salt to make the food taste better. Finally add lettuce and boil it again.

The taste of bing tteok and been congee is both refreshing and light. It is healthy and it can be made easily and the ingredients are obtained easily on the island. The cooking method is simple, which makes it suitable for many people.
